Ingredients
  

  • 1 medium-sized ripe pineapple peeled, cored, and cut lengthwise into 1/2-inch-wide strips
  • Olive oil as needed
  • Coarse salt to taste
  • Freshly ground black pepper to taste
  • 1 large red bell pepper cut into 1/4-inch dice
  • 1/2 cup red onion peeled and cut into 1/4-inch dice
  • 2 to 3 serrano chiles minced
  • 1/3 cup coarsely chopped fresh cilantro plus extra sprigs for garnish
  • 1 to 2 tablespoons freshly squeezed lime juice to taste
  • Pinch of salt to taste, depending on the ripeness of the pineapple

Method
 

  1. Place the pineapple strips in a medium bowl and season with olive oil, salt, and pepper.
  2. Grill the pineapple strips until nicely marked but not too charred.
  3. Set the pineapple aside until cool. Then cut the strips into 1/2-inch dice and return them to the bowl.
  4. Add the bell pepper, onion, serrano chiles, cilantro, and lime juice, then mix well.
  5. Taste and adjust the seasonings.
  6. Set the salsa aside for 30 minutes, then serve.

Notes

Yields 2 to 2 1/2 cups.
